Stuffed Baked Apples with Sticky Apple Syrup

  • 4 Apples/granny smith or red delicious
  • 8 chunks crystallised ginger (roughly chopped)
  • ¼ mixed dried fruit (currents, cranberries, apricots, raisin etc)
  • ¼ walnuts (toasted & chopped)
  • ½ cup Zany Zeus Cream Cheese
  • 5-8 fresh mint leaves (roughly chopped)
  • 3-4 Tablespoons rolled oats
  • 1 Tablespoon brown sugar
  • 1 teaspoon butter
  • 1 ½ cups of apple juice/or cider
  • 1 Tablespoon butter


  1. Preheat the oven to 180 degrees. Carefully remove the core from each apple with a small paring knife, do not go through all the way through to the base of the apple.

  2. In a bowl, combine ginger, dried fruit, nuts, Zany Zeus cream cheese & mint. In a separate bowl mix together the brown sugar & oats & one teaspoon of butter, mix to combine. Fill the apples with the cream cheese mixture & top with oat mixture.

  3. Bake for 15 to 20 minutes or until tender enough to easily pierce with a fork.

  4. While the apples are cooking put the apple juice, brown sugar in a saucepan on a moderate heat, make sure the sugar dissolves, then bring to the boil. Lower the heat & simmer until the syrup has reduced by at least half. Add the butter & stir, the butter helps the syrup thicken as it cools & also give a glossy look.

  5. When the apples come out of the oven pour the apple syrup over the hot apples & serve immediately.

  6. Serve with Zany Zeus Greek yoghurt, dusted with cinnamon or thick creamy vanilla custard made with Zorganic milk.
