Zany Zeus Halloumi & Pea Fritters

Serves-4 (as a main)
Suitable Gluten Free recipe if using Gluten Free flour option



  • 250g fresh or frozen peas
  • ½ cup fresh mint leaves, chopped roughly (extra for serving)
  • 3 eggs
  • ½ cup Zany Zeus Zorganic milk
  • 1 1/4 cups self-raising flour (for a Gluten Free option use Gluten Free flour & one teaspoon of Baking Powder)
  • 2 spring onions, thinly sliced
  • 250g Zany Zeus Haloumi, cut into small cubes
  • 2 tablespoon parmesan, grated
  • zest of a lemon (extra-lemon wedges to serve)
  • salt & pepper, to season
  • olive oil, for frying
  1. Place peas in a large bowl, cover with boiling water & stand for 2 minutes, then drain.

  2. Pulse peas & mint in a food processor or stick until roughly chopped.

  3. Whisk eggs & milk together in a separate bowl. Place flour in a bowl & make a well then pour egg mixture & mix together until combined & a smooth batter is formed. Finally add the pea mixture, spring onion, haloumi & parmesan, season with salt & pepper, mix till combined.

  4.  Heat a frying pan to a medium heat; cover the base of the pan with oil.

  5. When the oil is hot place 3 large tablespoons of mixture in the pan, cooking several fritters at a time, cook each fritter till golden brown on each side & cooked through.

  6. Place fritters in the oven to keep warm, till ready to serve.

These fritters are great served as a main or even a canapé.
Serve with lemon wedges and fresh mint leaves.
